1/2 lb. snow peas (thawed if using frozen), cut in half
1 cup frozen peas, thawed
1/2 cup soy sauce
2 tbsp. brown sugar
Instructions
Cook rice as directed. Set aside.
In a large bowl, combine the chicken, green onion, and ginger. Shape into meatballs (should get around 16).
Heat 1 tbsp. of the oil in a skillet over medium-high heat. Cook the meatballs, turning, until cooked through, about 10-12 minutes. Transfer to a plate.
Wipe out the skillet. Heat 1 tbsp. oil over medium-high heat. Add the snow peas and peas. Cook, tossing, for 2 minutes. Return meatballs to skillet.
In a small bowl, combine the soy sauce and sugar. Add to the skillet and simmer until slightly thickened, 2-3 minutes. Serve over the rice.
