Grease well sides of 2 - 7 1/2 x 3 1/2 x 2 inch loaf pans, or 1 - 8 x 4 x 2 inch loaf pan. In a large mixing bowl, beat butter with an electric mixer on medium speed about 30 seconds, or until softened. Add 1 cup sugar; beat about 5 minutes, or until light and fluffy. Add eggs, one at a time, beating until combined. Add flour, buttermilk, shredded lemon peel, baking soda, and salt; beat until just moistened. Stir in nuts. Pour batter into prepared pans; spread evenly. Bake at 350 degrees until wooden toothpick inserted comes out clean.
