Stir together half the flour, the yeast, salt, and water. Gradually knead in remaining flour and knead until very smooth and elastic, about 5 or 10 min.
Cut dough ball in half, place both halves in a bowl with olive oil, turn to make sure all sides of dough are greased.
Preheat oven as high as it will go. After dough has doubled in size, flatten and stretch each ball gently until each ball covers one 9 by 13 inch sheet. Cover with sauce and bake about 15 min; cover with toppings and bake 3-5 minutes more.
