     Mexican Casserole

Ingredients
1 package Perdue sliced chicken
1 cup salsa
1 cup cheese
2 tablespoons sour cream
1 small package yellow rice
water as directed for rice
1 small can black olives
1 small can fiesta corn
1 cup cooked mushrooms
 

Instructions
Preheat oven to 350 degrees. Cook rice as directed. Pour rice into small casserole dish. Pour mushrooms, olives, and corn over rice.
Microwave chicken as directed. Pour chicken on top.
pour salsa over chicken. Sprinkle cheese over top. Put in oven until cheese is melted. Serve and pour one tablespoon of sour cream over each serving.
