     Rhubarb Cake

1/2 cup vegetable shortening
1 1/2 cups sugar
2 eggs
1 tsp vanilla
1 cup buttermilk
2 cups flour
1 tsp baking soda
1/2 cup salt
2 cups rhubarb

Cream shortening and sugar, add eggs and vanilla. Add soda, salt and buttermilk. Then add flour. Last fold in the rhubarb. Sprinkle top with 1/4 cup sugar mixed with 1 tsp cinnamon. Bake at 350 degrees for 45 minutes. Serve with fresh whipped cream.
