First, put the unpeeled potatoes into a saucepan and cover them with plenty of water. Place the saucepan over high heat and reduce the heat once the water boils. Boil the potatoes for approximately 20 min. until soft. Take out the potatoes using a straining ladle and drain off the water. Hold the potatoes with a dish towel and peel them while they're still hot. Dice the peeled potatoes into 1/4 inch cubes.

Peel the onions. Finely chop the peeled onions. Line a dish with paper towels. Boil plenty of water in a sauce pan. Put the beef into the boiling water and boil it briefly. Place the beef in the paper towel lined dish and dry it with more paper towels. Dice the dried beef into 1/3 inch cubes.

Heat the 2 tsps of cooking oil in the frying pan over moderate heat. Saute' the onions until they're transparent. Cook the beef over moderate heat along with the onions until the meat is browned. Briefly saute' the potatoes with the onions and beef. Season to taste with some salt and pepper. Mix in the finely chopped parsley, turn off the heat, and remove from the stove.

Break each of the eggs into separate bowls. Put the 2 tbsps of cooking oil and the butter into the frying pan. Melt the butter over moderate heat. Put the eggs into the frying pan and add some salt and pepper. Cook until the egg whites become solid and turn off the heat. Transfer the cooked beef and potatoes to plates. Top each serving with a cooked egg. IT'S READY TO EAT!
