Asian Pea and Lettuce Salad

Ingredients
-
2 cups shelled or frozen peas
-
1/2 red or yellow pepper
-
1/2 small fennel or peeled daikon or jicama
-
1 head boston lettuce
-
2 tbsp vegetable oil
-
2 tsp sesame oil
-
1 tbsp soy sauce
-
1 tbsp of finely grated fresh ginger
-
1 tsp granulated sugar
 
-
sesame seeds ( optional)

Instructions
Partially fill a large saucepan with water and bring to a boil over high heat.Add peas. Boil, uncovered, until tender, 5-15 minutes.Frozen peas need about 4 minutes.Meanwhile, finely mince pepper and fennel.Separate lettuce leaves, then shred.Place pepper, fennel and lettuce in a large bowl.
In a small bowl,whisk oils with soy, ginger and sugar until dissolved.When peas are done, drain and rinse under cold running water.Pat dry with paper towels, then add to vegetables.Drizzle with dressing and toss just before serving.
Serving Suggestions
Add a sprinkle of sesame seeds if desired.
