Caribbean Chicken Wings

Category   Entrees - Maindishes
Sub Category   None
Preptime   40min marinate 4-6h

Ingredients
-
1 habanero, seeded and chopped
-
1/4 cup soy sauce
-
1/4 cup apple cider vinegar
-
1/4 cup honey
-
1/4 cup orange juice
-
1/4 cup lime juice
-
1/4 cup brown sugar
-
2 Tbsp sugar
-
2 tsp fennel

-
2 tsp cayenne
-
2 tsp dried tyme
-
2 tsp all spice
-
1 tsp ground ginger
-
4 garlic cloves, chopped
-
4 green onions, chopped
-
7 lbs chicken wings

Instructions
In food processor, blend all ingredients but chicken. Set aside 1.5 cups, and marinate chicken in remaining liquid for at least 4 hours. Bake chicken at 350 for 20 minutes. Meanwhile bring reserve marinade to a boil and small sauce pan. Reduce by 1/3, slightly thickening it for about 10 minutes. After 20 minutes, remove chicken from oven. Brush chicken with the glaze. Raise the heat to 400 degrees F and cook chicken until cooked through, another 20 minutes.
NOTE- I have used jalapenos instead of the habanero. I also have used chicken legs and grilled it. It is just a great marinade. Everybody love it.
