     Classic Biscuit

Ingredients
1/2 cup butter
2 1/2 cups flour (sifted twice before measuring)
1 tbsp baking powder
1 tsp salt
1 cup plus 2 tbsp cold buttermilk
1 tbsp melted butter
 

Instructions
Heat oven to 475F. Cut butter into small cubes and freeze for 15 min.
Stir the dry ingredients together in a large bowl. Cut in the butter until mixture resembles a coarse meal. Stir in buttermilk using a fork just until the dough forms.
Knead 3 to 4 times on a lightly floured surface and pat into a 7 x 10 in. rectangle. Cut out biscuits using a 3 in. cutter (or a mouth of a cup). Reuse dough until all is used.
Place two inches apart on a baking pan. Brush the top with melted butter. Bake on the top shelf of the oven for 16 to 18 min. Transfer to a wire rack. Serve warm or at room temp.
Serving Suggestions
can use 1 tblsp lemone juice or white vingear, mixed with 1 cup plus 1 tbsp milk. Let stand 5 min. or until thickened and use in place of buttermilk
