     Egg 'n' Hashbrown Bake

Ingredients
8 hash brown patties
4 c shredded cheddar cheese
1 medium onion, sauteed
1 lb fully cooked ham or turkey, cubed
10 eggs
1/4 c milk
2-3 tomatoes, sliced
 

Instructions
Preheat oven to 350F. Grease 9 x 13 in. baking dish. Sautee onions, season with salt and pepper.
Layer hashbrowns to cover bottom of baking dish. Top with ham or turkey, onions, and 3 c of cheese.
In a medium bowl beat eggs with milk, season with salt and pepper to taste. Pour over potatoes, meat and cheese.
Cover and bake for 50 minutes. Uncover, top with tomato and remaining cheese. Return to oven and bake for additional 15-20 minutes until golden brown and a knife comes out clean from the center.
Serving Suggestions
Fresh fruit and toast.
