Beat first 6 ingredients in a large bowl with mixer on med. speed. On low gradually beat in flour.

Divide dough into four portions. Shape each into 1/2-in thick disk; wrap seperately. Refrigerate 2 hours or let firm.

Heat oven to 350F. Use nonstick spray on the baking sheets. Place 1 disk at a time between 2 sheets of wax paper that have been sprinkled with flour. Roll to 1/8-in. thick. Remove top sheet of paper. Cut out ornament shapes (or any shape desired). Transfer shapes with a floured spatula to baking sheets. CHill scraps, the reroll and cut.

Bake 10 to 12 min, just until edges are golden. Cool on baking sheet on wire rack 2 min, then remove to rack to cool completely. Frost and decorate with gel. (If giving as a gift line a box with cupcake liners. Stack cookies in most of the liners and leave a few random ones empty. Fill the empty holders with small tree ornaments.)
