     Good Eats Roast Turkey

Ingredients
1 whole 14-16 lb turkey
Brine- 1 c kosher salt
Brine- 0.5 c light brown sugar
Brine- 1 gal veg/chick stock
Brine- 1 tbsp black peppercorns (whole)
Brine- 0.5 tbsp allspice berries (whole)
Brine- 0.5 tbsp candied ginger
1 gal ice water
Aromatics- 1 red apple, sliced
 
Aromatics- 1 onion, sliced
Aromatics- 1 cinnamon stick (whole)
Aromatics- 1 c water
Aromatics- 4 sprigs rosemary
Aromatics- 6 leaves sage
canola oil

Instructions
Combine brine ingredients in stockpot. Boil until solids are dissolved. Cool to room temp and refrigerate. Combine brine and water in bucket, add turkey, breast-side down. Let sit for approx 6 hours, turning once.
Heat oven to 500. Combine apple, onion, cinnamon, and water, and microwave 5 mins. Rinse turkey. Pat dry in pan, cover with canola oil.
Roast for 30 min, or until golden. Cover breast with foil, reduce temp to 350. Set thermometer to 161.
