     Graham Cracker Cinnamon Cookies

2 cups graham cracker crumbs
1 1/2 cups all-purpose flour (I used 1 1/2 cups plus 3 Tablespoons cake flour)
1 teaspoon ground cinnamon (I used 2 teaspoons)
1 teaspoon baking soda
1 teaspoon salt
1 cup butter
1/4 cup white sugar
1 1/4 cups packed brown sugar
2 large eggs
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Combine first five ingredients and set aside. Cream butter, sugar, and brown sugar. Add eggs, one at a time, mixing well after each. Add vanilla and mix well. Add dry ingredients to butter mixture and stir until combined. Drop dough two inches apart by rounded spoonful (I used a 1 1/2 teaspoon measuring spoon) on an ungreased cookie sheet. Bake for 9 to 11 minutes or until edges are brown.
