2 packages active dry yeast
1/2 cup warm water (110 degrees)
1-1/2 cups boiling water
1 cup quick rolled oats, uncooked
1/2 cup molasses
1/3 cup shortening
1 tablespoon salt
5 to 5-1/2 cups flour
2 eggs, beaten

Soften yeast in warm water. Combine next 5 ingredients in a bowl; cool to lukewarm. Beat in 2 cups flour. Beat in eggs and yeast. Add enough more flour to make a soft dough. Cover and refrigerate at least two hours.
Turn out onto a floured surface, form into 2 loaves and place into greased 9 x 5 x 3 inch pans. Let it rise until doubled in bulk.
Bake in a 375 degree oven 40 to 45 minutes. This bread freezes well.
