     Chicken and Spinach Risotto

olive oil
Chicken (1lb)
A good handful of leaf spinach
Short/Medium grain rice (1c.)
Water/chicken broth (3c)
Italian Cheese grated or shredded

Wash Spinach but keep whole Cook chicken (about 1lb breast meat) in olive oil until cooked through. Dice into one inch pieces.
Add 1c. rice, 3 c. broth/water/mix and spinach to rice cooker. Cook rice. When the rice cooker switches off, add the chicken, and a healthy handful of cheese (1/4 c.) an mix in.
Let the mixture warm back up completely before serving. Salt and pepper to taste. (If you didn't use a chicken or vegetable broth, it is going to need salt.)
