Wash Spinach but keep whole
Cook chicken (about 1lb breast meat) in olive oil until cooked through. Dice into one inch pieces.
Add 1c. rice, 3 c. broth/water/mix and spinach to rice cooker. Cook rice.
When the rice cooker switches off, add the chicken, and a healthy handful of cheese (1/4 c.) an mix in.
Let the mixture warm back up completely before serving. Salt and pepper to taste.
(If you didn't use a chicken or vegetable broth, it is going to need salt.)
