3 1/2 cups all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
4 large eggs
1 c. vegetable oil
1 (16 oz.) can pumpkin
1 (8 oz.) can crushed pineapple, drained
1 c. chopped pecans

Preheat oven to 350F. Grease and flour 2 (9x5-inch) loaf pans
In a large bowl, combine flour and next 7 ingredients Add eggs and oil; beat well. Stir in pumpkin, pineapple and pecans.
Pour batter evenly into prepared pans. Bake 35-40 minutes, or until a tester inserted in center comes out clean.
