     Beef Stew

Ingredients
2 pound lean sirloin tip
1 tbsp olive oil
1 large onion, chopped
4 medium carrots, sliced
2 medium potatoes, cut into pieces
2 medium celery stalks, sliced
1 tsp thyme
1tsp ground mustard
1 cup water
 
1 cup dry red wine
1 (16 oz) can no-salt added stewed tomatoes
3 tbsp flour

Instructions
Trim all fat and cube. Heat olive oil in a large soup pot over medium heat. Add beef and quickley brown. Add remaining ingredients except flour, salt and pepper. Simmer approximately 1 hour (until veggies tender).
Combine 1 cup stew broth with flour in bowl. Mix with fork or whisk and add to stew. Contineu heating another 10-15 minutes or until thickened.
