     Mushroom Risotto

1 x cup of mushrooms
2 x cups of arborio rice
1 x litre of vegetable stock
1/2 cup of white wine
1 x cup of cheese
small onion chopped finely

Bring vegetable stock to a boil in a pot. Saute mushrooms remove from pan.
Fry garlic and onion in butter, aprrox 3 mins. Add rice and fry until it begins smelling nutty. Do not let it burn.
Add wine, once it is almost soaked up begin ladling stock into pan. If you run out of stock just use hot water. Add next lot of stock when rice is nearly soaked up all of juices.
Once rice is 5 mins away from being cooked. Rice should be firm to the bite and not too soggy.Add remaining ingredients. Should be served straight away
