2-3 cups cooked chicken breasts (more or less for amount of chicken you want)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped or to taste (optional)
1 cup sliced almonds
1/4 cup sunflower seeds
2 packages ramen-type noodles, oriental flavor
3 tbsp. oil
---------------------
FOR DRESSING
3/4 cup vegetable oil or canola oil
4 1/2 tbsp. seasoned rice vinegar
4 1/2 tbsp. sugar
2 tsp. salt
1 tsp. pepper
1/2 package of the ramen oriental seasoning
Instructions
Prepare dressing and set aside.
Break up noodles of ramen and brown over medium heat in 3 tbsp. oil. Once noodles have begun to slightly brown, add sliced almonds. (If you start to brown the ramen and almonds at the same time, the almonds will burn before the ramen browns).
Once ramen noodles have turned to a golden brown, remove from heat and set aside.
Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
When serving, add ramen/almond mixture and toss well. Add dressing and stir to coat.
(If the dressing sits too long in the refrigerator, it gets thick and wont remix well--maybe make it right before serving.)
