1 Large Onion Charred
3 Cloves Garlic
3 Tablespoon Malt Vinegar
1/2 Tsp Salt and Pepper
1 Tsp Mixed Dried Herbs
1/4 Tsp Sugar
1 Cup Evaporated Milk
3 lbs Pork Shoulder
1 Cup Water
3lbs Lard

Put onion, garlic, vinegar, salt and pepper, and milk in blender. Bledn to a paste.
Rub paste over meat and chill over night.
Put meat into baking dish large enough to hold lard, add water.
Add lard and bake 325o for 2 hours. Drain Fat.
Serving Suggestions
Serve with Flour Tortillas or Corn Tortillas and Salsa
