     Summer Strawberry Shortcake

4 cups fresh strawberry
1/2 cup sugar
2 1/3 cups Aunt Jemima complete pancake mis
1/2 cup water
3 tablespoons butter, melted
1 teaspoon vanilla
1 cup cool-whip

Add 1/4 cup sugar to strawberries, chill for 1 hour. Combine remaining 1/4 cup sugar, pancake mix, water, butter and vanilla. Mis until dry ingredients are moist. Form a ball and knead 8-10 times. Press into greased 8 inch cake pan. Bake at 425 degrees for 18-20 minutes or until toothpick comes out clean. Cool on wire rack about 15 mins. Cut cross wise into 2 layers. Put 2 cups of berries on 1st layer, top with 1/2 coolwhipe, add 2nd layer, remaining berries and 1/2 cool whip.
