Ingredients
1 large potato, shredded
1 medium onion, thinly sliced
1 1/2 tablespoons butter
2 eggs
dash of salt and pepper to taste
 

Instructions
Saute potatoes and onions until soft. Set aside. Prepar 2 eggs, 2 tablespoons water, salt and pepper. Fold 1/2 of the potatoes into omelet before turning. Filling is enough for two omelets.
