vegetable oil spray
1 cup yellow cornmeal
2 teaspoons sugar
1/2 tspn salt
1 tspn baking powder
1/4 tspn baking sda
1/3 cup boiling water
3/4 cup buttermilk
1 large egg, beaten lightly
1 tablespoon unsalted butter

preheat oven to 450 and spray a 9in round cake pan or 8in square pan with the vege oil
measure 1/3 cup of cornmeal into medium bowl. wisk remaining cornmeal, sugar, salt, baking powder, and baking sodar in a small bowl
pour boiling water in the 1/3 cup cornmeal and stir to a stiff mush. wisk in buttermilk gradually, when smooth add in egg and melted butter. then stir dry ingredients untill moistned and pour in pan
bake untill bread is golden brown, 20 min.flip out of pan and let cool for 5 min
