     English Muffin Bread- Microwave

2 cups milk, skim
1/2 cup water
5 cups flour
2 envelopes dry yeast
1 tablespoon sugar
2 teaspoon salt
1/4 teaspoon baking soda

Grease two glass loaf pans. Sprinkle with cornmeal, shaking out excess. Combine milk and water in 1qt. microwave bowl. Heat in microwave on high until warmed through, about 3-4 min. Mix 3 cups flour, yeast, sugar, salt and baking soda in large bowl. Add warm milk mixture and beat well. Blend in the remaining flour and stir until dough is stiff. Divide dough between pans. Cover and let rise in warm draft-free area 45 min. Cook loaves one at a time in the microwave on high 6-6 1/2 min. turning once. Let stand 5 min. before removing from pan. Slice loaves thinly and toast before serving.
Serving Suggestions
slice and make sandwich of smoked turkey and provolone cheese. Butter amd grill....wonderful.
