     Light Zucchini Bread

Ingredients
3 eggs
3/4 cup oil
1 1/2 cups sugar
1 tsp orange extract
1 tsp lemon extract
1/2 tsp vanilla extract
2 cups grated zucchini
2 1/2 cups flour
3/4 tsp salt
 
1/2 tsp cinnamon
1/4 tsp ginger
1 tsp baking soda
2 tsp baking powder
1/2 cup chopped nuts
Instructions
Mix all the wet ingredients together well.
Mix all the dry ingredients together and add to the wet mixture.
Oil pans lightly. Bake for 1 hour in a 350 degree oven.
