1 c canned crab meat (picked through to remove any shells)
1/4 t salt
pinch pepper
2 T dry sherry
3 eggs
1 c whipping cream
1/4 t salt pinch pepper
1 T tomato paste.
8 in pie shell, pre-baked at 375F for 10 min.
1/4 c grated Swiss cheese
Instructions
Saute onions 2 min in butter. Add crab meat and continue cooking 2 min. Add wine, remove from heat, and cool slightly.
Beat together next 4 ingredients- eggs, cream salt and pepper. Add tomato paste and beat well to mix in. Blend with the seafood mixture.
Pour mixture into pie shell, top with cheese, and bake at 350F for 25-30 min, until top is browned and eggs are set. If crust gets too brown during baking, cover with foil strips.
