     Chewy Granola Bars

Ingredients
4-1/2 cups rolled oats (but I also use quick oats if that is all I have)
1 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1/2 cup butter, softened
1/2 cup honey
1/3 cup packed brown sugar
2 cups chocolate chips (I use less - probably about a cup per recipe)
 
2 eggs

Instructions
Combine all ingredients until well moistened. The mixture will still be very grainy and not super moist. Grease 9x13 inch baking dish. Lightly press mixture into the prepared pan. Bake at 325 degrees for 18-22 min. or until golden brown. Let cool for 10 min. and then cut into bars. Let bars cool completely before removing from the pan or serving.
Sometimes I substitute one cup of wheat bran for one of the cups of oats. I might also add raisins, m&ms, peanut butter chips, craisins, sunflower seeds, dried fruit, and things like that instead of chocolate chips. This last time I put sunflower seeds in there along with the chocolate chips. Other nuts are good too. I've got some macadamia nuts I'm going to try.
I go through at least two recipes of this per week. Sometimes three. One recipe yields about 12-16 bars. I cut them down the middle and then into approx. 1 inch strips or there about.
