     Chicken Posole

Ingredients
1 pre-cooked chicken
3 cans chicken broth
2-3 ancho chiles
1 can white hominy
minced garlic to taste
adobo seasoning
lime juice
cilantro
salt/pepper
 

Instructions
Put ancho chiles in water to rehydrate. Set aside 1/4 of the chicken broth and put the rest in a large cooking pot. Bring the broth to a simmer.
Blend the chiles, minced garlic, and the reserved broth together, then add to the simmering broth. Add the hominy and adobo seasoning and let simmer for 15-25 minutes. Take the precooked chicken and shred it, then add it and the cilantro in. Give a couple squeezes of lime juice and simmer for another 10-15 minutes. Before serving, season with salt and pepper to taste.
---Suggestion--- I like to add a bit of flour to thicken it up just a bit. After adding in the chicken, I sprinkle a spoonful of flour in while whisking.
Serving Suggestions
Serve with cheese, olives, avocado, and cornbread. =)
