1 cup cornmeal
|

1 cup AP flour
|

1 tbsp salt
|
|
2 tsp baking powder
|
|
2 eggs, lightly beaten
|

1 cup water
|
|
1 tbsp. Tony's Creole seasoning
|

1 cup finely chopped onion
|
|
4 cups thinly sliced okra
|

NOTE-
|
|
Use frozen sliced okra. After it thaws, pound the bag with a large wooden mallet to break up okra.

Instructions |
|
|
Whisk cornmeal, flour, baking powder, and salt.
|
|
|
Whisk together eggs and water, stir into cornmeal mixture, mixing only until moist.
|
|
|
Sprinkle Tony's over okra and onions and toss to coat.
Fold into cornmeal batter.
|
|
|
Spoon by heaping tablespoons into hot oil and fry.
|
