     Zucchini Pancakes

2 cups shredded zucchini
1 teaspoon salt
2 teaspoons Tony's
2 tablespoons minced red onion
1 egg, lightly beaten
2 tablespoons biscuit baking mix
1 teaspoon Tony's Creole seasoning
1 teaspoon salt
1/4 cup grated Parmesan cheese
Dash pepper

Shred zucchini, sprinkle with salt & Tony's. Toss. Let sit in a colander for about 30 minutes to drain Pat dry with paper towels.
In a bowl, combine all ingredients.
Heat 2 tablespoons vegetable oil in skillet over medium heat.
Drop by 1/4 cupfuls into oil. Fry until golden, turn, and cook other side.
