     French Dip Roast Beef Sandwiches

2 tbs butter
1 shallot, chopped (or onion)
1 & 1/2 tbs flour
2 cans (14oz each) beef consomme'
1 & 1/2 pounds deli-sliced roast beef
steak seasoning blend/salt and/or pepper
4 sandwich rolls

In a large, shallow skillet over moderate heat, melt butter. Saute' shallots in the butter approx 2 minutes. Add flour and cook 1 minute longer. Whisk in consomme' in a slow stream. Bring sauce to a bubble and allow to simmer over low heat.
Pile roast beef loosely on a large work surface and season with steak blend or salt and pepper. Using togs, dip meat into sauce and pile onto rolls. Serve with extra sauce for dipping.
