     Chocolate Zucchini Cake

1 C sugar
2 1/2 C flour
1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp cinnamon
4T cocoa
1/2C oil
1 C buttermilk or 1 C milk plus 3 tsp vinegar
1 tsp vanilla
2 eggs
2 C finely shredded zuchini
4 ozs mini chocolate chips (optional)

Sift together flour, baking powder, baking soda, spices and cocoa and set aside.
In a larg mixing bowl beat eggs, sugar, oil, vanilla and buttermilk.
Stir in dry ingredients and beat well. Fold in zucchini and mini chips.
Pour into a 9 by 13 pan that has been sprayed with nonstick spray. Bake at 325 degrees for 45 mins or until a cake tester comes out clean.
