Cook snap peas in boiling water with 1/2 teaspoon baking soda for 1 1/4 minutes. (bring water to a boil and put in peas and cover for 1 1/2 min.)
Drain in colander & immediately put in bowl of ice water. Drain & pat VERY DRY.
Just before serving toss with mixture of olive oil, lemon juice,salt & 1/4 teaspoon of lemon zest.
Serve & sprinkle with other 1/4 zest...
Can warm or serve at room temp....
