12 chocolate cookies, such as Pepperidge Farm brand Brownie cookies
1/3 cup cherry fruit spread or jam
2 pints pistachio ice cream
Instructions
PreparationSpread the cookies with the jam. Scoop the ice cream onto six cookies, then top with the remaining six cookies and press down lightly. Wrap the sandwiches and freeze.
