     Glazed Raspberry Pie

Ingredients
1 cup fresh raspberries (for juice)
3/4 cup granulated sugar
2 1/2 tbsp cornstarch
Pinch salt
1 baked 9 inch pastry shell
3 cups or more fresh raspberries
 

Instructions
To make glaze, crush 1 cup berries; add cold water to make 1 cup juice mixture. Pour into small heavy saucepan and place over medium-high heat; bring to a boil. Reduce heat and simmer for 3 minutes; strain and add cold water to make 1 cup.
In a small heavy saucepan, combine sugar, cornstarch and salt. Gradually whisk in raspberry juice mixture and bring to a boil over medium heat, stirring constantly. Cook for one minute or until mixture is thick, stirring constantly. Cool glaze slightly.
Generously fill pie shell with raspberries. Pour glaze over raspberries. Put in refrigerator for two to three hours or until glaze is chilled and set.
