Combine chili powder, garlic powder, onion powder , paprika, oregano, cayenne and black pepper, and set aside.
Brown onions in olive oil, remove with slotted spoon add meat and brown, remove with slotted spoon.
Add dry spices and cook 1 or 2 minutes, add broth, tomato sauce, beer, meat, onions, tomatoes.
Stir together and cook real slow for 2 hours or more until meat is tender. Serve with shredded sharp cheddar cheese on top.
