2 to 3 Italian sausages (or ground Italian sausage)
4 to 5 ripe tomatoes
1 large bunch fresh basil, chopped
2 to 3 cloves of garlic, crushed
olive oil
3 large handfuls of spinach
parmesan cheese
Instructions
Boil sausage until almost cooked.
Place chopped tomato, basil and garlic in deep pan, drizzle with olive oil, sprinkle with pepper and roast in the oven at 375F for approximately 30 minutes, stirring occasionally.
Slice the almost cooked sausage into small pieces and brown it in a large frying pan with a little olive oil.
Add the roasted tomatoes/basil and spinach to the frying pan and cook on low heat for 3-5 minutes.
Toss with cooked pasta and sprinkle with parmesan cheese.
