Preheat oven to 350 degrees.
Butter and flour a 15 1/2 inch x 10 1/2 inch x 1 inch jelly roll
pan or cookie sheet set aside
Combine the butter, yolks, cinnamon, sugar and flour and mix until
you have a cohesive ball of dough. I soften the butter a bit to
make it easier to combine. Place in refigerator for about 15
minutes to make it harden up a bit and make it easier to roll out.
Roll out the dough to fit prepared pan.
I roll out between 2 sheets of waxed paper- it makes it easier.
Place in prepared pan and bake in oven for about 15 minutes.
Meanwhile combine the almonds, sugar, butter, honey and milk and heat
stirring on occasion until the mixture is golden brown.
Remove baked dough, spread almond mixture over top and bake for 15-20
minutes longer until medium golden.
