Place a large saute pan on stove over high heat and allow it to
come to temperature. While pan gets hot remove Pork from
package and trim excess fat. Season all sides of pork with
Kosher Salt and Pepper. Coat pan with olive oil and brown pork
on all sides. Turn off heat and remove Pork from pan. Place
directly into crockpot/slow cooker.

In a separate bowl combine coconut milk, tomato paste, paprika,
and chipotles. Wisk together and pour over pork in crockpot.

Turn heat back on saute pan. When pan begins to smoke, deglaze
pan with 8oz of beer. Scrape all surfaces of pan with wooden spoon
in order to collect all pork flavor. Transfer beer with pork pieces
directly to crockpot.

Cook all ingredients together on low setting in crock pot for at
least 6 hours. Allow pork to cool for 30 minutes in crock before
serving. Immediately before serving, pull pork using two forks.
