     Apple-Nut Bars

1 1/4 cup packed light brown sugar
6 Tbs margarine
1 1/2 cup chunk applesauce
2 eggs
2 tsp vanilla extract
2 cups unbleached flour
1 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 1/2 cups rolled oats
1/2 cup raisins
1/4 cup chopped walnuts

Preheat oven to 350 degrees F. Coat a 9x3-inch baking pan with nonstick spray. Using an electric mixer set at medium speed, beat sugar and margarine until light and fluffy. Add applesauce, eggs and vanilla. Beat until well blended.
In a large bowl, whisk together flour, baking soda, pumpkin pie spice, and oats. Stir in raisins and walnuts. Add oat mixture to applesauce mixture. Stir well. Spread in prepared pan.
Bake until a toothpick inserted in center comes out clean, about 30 mins. Cool in pan on a wire rack.
