     Carol's Carrot Cake

1 1/2 cup salad oil
2 cups flour
2 cups sugar
3 cups grated carrots
1/2 cup chopped nuts (pecans or walnuts)
1 tsp salt
4 eggs
2 tsp baking soda
2 tsp cinnamon
2 1/2 cups confectioners sugar
2 tbl vanilla
1 8 oz. pkg. cream cheese room temp.
1 cup chopped nuts

Mix first 9 ingredients, mix with mixer at slow speed, until all ingredients are well blended.
Grease sheet cake pan and dust lightly with flour. Pour in batter which at this stage looks absolutely terrible. Bake about 1 hour at 350 degrees. Cool before adding topping.
For topping mix all ingredients except together until smooth. When fully smooth add chopped nuts.
Spread topping on cooled cake. Cover with plastic wrap. Topping will get all over the plastic when you wrap it, but enough will stick on for him to still think it's good.
