Preheat oven to 350 degrees.
Combine first 6 ingredients in large bowl.
Heat oil and honey in a small saucepan over medium
heat until warm. Remove from heat and stir in
vanilla.
Pour over mixture and stir to coat.
Transfer to jelly roll pan, spreading evenly.
Bake until coconut and nuts are golden, stiring
occasionally, about 20 minutes. Watch closely!
Let cool for 10 minutes, stir, and cool
completely.
Add dried fruit.
Store in airtight container.
