     Panko Crusted Cod

Ingredients
1 cup Panko breadcrumbs (I highly recommend Progresso Italian seasoned)
1 lb Cod fillets
1 egg (beaten)
 

Instructions
Crack the egg in a shallow bowl. Pour breadcrumbs onto a separate plate. Spray a cookie sheet with nonstick spray. Cut fish into 3 equal portions. One at a time, dip fish into egg mixture, press each side into breadcrumbs, and place on sprayed cookie sheet. Bake at 425 for 17-19 minutes.

Serves 3 -- per serving- 276 calories, 9 g fat (1 g saturated fat), 16 g carb (o g fiber), 31 g protein
