     Vegetarian Whole Wheat Lasagna

Ingredients
1 8 oz package of whole wheat lasagna
9 oz spinach (frozen or fresh chopped)
1/2 cup grated parmesan
1 jar pasta sauce
3 eggs
3 cups low fat cottage cheese
3 cups low moisture part skim mozzarella cheese
 

Instructions
Pre-heat oven to 325 degrees.
Beat eggs in mixing bowl. Slowly add cottage and parmesan cheese in bowl. Put one layer of cooked lasagna noodles flat across the bottom of 13 X9 greased baking dish. Add 1/2 of the spinach over noodles. Top spinach with cottage cheese mixture. Add layer of pasta sauce. Add another layer of noodles. Continue until all ingredients are gone or baking dish is full. Sprinkle top with mozzarella cheese. Cover baking dish with foil and bake for 1 hour 15 minutes.
