Cut the spaghetti squash in half and place on baking sheet, with the flat side down, bake at 375 degrees for 30-45 minutes.

Drain tofu, cut into cubes, Marinate for 15 minutes in your favorite Thai curry sauce that can be purchased at the grocery store or if you have your own recipe for a sauce you can use that. Bake the tofu at 375 degrees for 20 minutes, you may flip half way through but it is not necessary.

Remove the spaghetti squash when it is finished and scrape the insides into a bowl and place to the side.

When tofu is ready place in skillet with about 1/4 cup additional marinade and 3 cups steamed broccoli (which you can prepare ahead of time), sautee the tofu and broccoli mixture. Once fully coated, add the squash to the mixture and stir to coat. Then serve! This makes about 4 serving, depending how hungry you are. Feeds us 2 people for dinner and 2-3 lunches for the week.
