No-bake Orange Cookies

Ingredients
-
 1/2 c. butter or margarine
-
 1/2 c. brown sugar, firmly packed
-
 1/2 t. grated orange rind
-
 1 c. orange juice
-
 2 c. quick-cooking rolled oats
-
 1/2 c. chopped nuts
-
 1/2 c. flaked coconut, optional
 
Instructions
Melt butter in large pan; add brown sugar, orange rind, and orange juice. Heat until sugar is dissolved, then remove from heat.
Stir in rolled oats and nuts. Spread into 9 X 9 pan, freeze, then cut into 2 X 1 inch bars. Alternate- Refrigerate dough for one hour, then shape into balls and roll in coconut.
