1 lb. meaty Ham hocks
|

1 cup chopped green onions
|

1/4 tsp. crushed red pepper flakes

3-1/2 cups chicken broth
|

2 pkgs. frozen blackeyed peas

1-1/2 cups uncooked rice
|
|

Instructions |

|
Combine ham hocks, onion, red pepper and broth in large saucepan. Bring to a boil, cover, and simmer 1-1/4 hours, or until ham is tender.

Add more broth to liquid left in saucepan to measure 3-1/2 cups, if necessary. Cut meant into small pieces, discarding bone and rind.
|

|
Combine ham, blackeyes and rice in saucepan; bring mixture to a boil.
|
|
|
Reduce heat, cover, and simmer 20 to 25 min., or until blackeyes and rice are tender and liquid absorbed. Season to taste with salt and black pepper.
