     Kasha Varnishkas (Kasha Bow Tie Noodles)

Ingredients
1 pkg Bow Tie Noodles
2 tbl oil
1 large onion, finely chopped
1 cup kasha
1 egg
2 cups boiling water or soup stock
1 tsp salt
1/4 tsp pepper
2 tbl margarine
 

Instructions
Cook bowtie noodles according to directions on pkg. Drain, set aside. In a heavy frypan with a cover, heat oil. Saute the onions for approx 5 minutes. Set aside. In a bowl, beat the egg. Stir the kasha into the egg so that all the kernals are coated.
Pour the egg coated kasha into the frying pan. Fry over high heat, stirring, until the egg has dried and kernels are separate for approx 3 minutes. Meanwhile in a saucepan bring 2 cups of water or soup stock to a boil.
Pour the hot liquid over the kasha. Add the onion and seasonings. Cover and simmer on low heat until all the liquid has been absorbed for 10 to 15 minutes. While the kasha is still warm, stir in the bowtie noodles.
Melt the margarine. Mix into the kasha and bowties. KASHA CAN BE PURCHASED IN BOX IN MOST FOOD STORES IN ETHNIC AREA. (WALDBAUMS)
Serving Suggestions
Great as main meal with veggies or as a side dish. Makes alot.
