     Karen's Banana Nut Cake / Bread

1 cup unsalted butter
1 and 1/2 cup sugar
4 eggs
2 cups mashed bananas
3 tsp vanilla
3 and 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
1 cup buttermilk or regular milk soured with a bit of lemon juice
1 cup chopped walnuts or pecans

Preheat oven to 350. Grease large sheet pan. In a large bowl cream butter, sugar, beat in 1 egg at a time until mixture is light. Add mashed bananas and vanilla.
In a seperate bowl, stir your dry ingredients until well blended. Add dry ingredients to the creamed mixture alternating with buttermilk a little at a time ending with dry mixture. Stir in nuts.
Pour into pan and bake approx 35 - 40 minutes or until toothpick comes out clean. Yummy..
