Cut off top and bottom. Cut off skin. Slice pineapple rings into whole 1/2 inch slices. Cut out core. Brush both sides with conconut milk. Dip each side into cinnamon brown sugar.

Grill approx. 4 min. on each side, or until sugar is carmelized.
|

|
Could add a scoop of your favorite ice cream as well.
